There is a sake brewery that has hand-produced sake for nearly 250 years in Ishige-machi, Ibaraki prefecture.
Sake brewing has a process which begins with rice-milling, and then koji-making, original processing etc.
And there are sake brewers who do not allow any compromises for brewing sake.
The sake which is called ‘Hitorimusume’ was named to to be loved like one's own child.
It was made as a rebellious sake that dared to use the soft water of the Kinugawa River which flows beside the factory.
This is a valuable film that photographed the sake brewing process finely and clearly.
It is Tomio Kaneyama’s 63-year-old work which was produced in 1984.
